Episode 10: In Focus – Our Happy Place
Opened just 8 months ago, Our Happy Place Cafe in Carrick on Shannon is “In Focus” this morning. Breifne is joined by Katelyn Quinn, the owner of the cafe to talk boxty wraps, social inclusion & her success in Ireland’s Best Young Entrepreneur competition this year.
The start-up business which now employs five people including some with physical and mental challenges is located in Mercantile Court at the rear of the Landmark Hotel in Carrick on Shannon and has a mix of the local, boxty, with the international, an audible American twang from Katelyn herself.
Born in New York to two Irish parents, she found herself back in Ireland to study at third level and after trying a number of options including accounting, nursing and care assistant she found herself on a culinary course and the rest was history.
Drawn to the positive buzz and atmosphere of Carrick on Shannon, she opened the cafe late last year and has watched the people of the town support both the cafe and the concept behind the initiative.
Having finished second in her category in the county during her Leitrim Local Enterprise Office run IBYE competition in her first year of business, she is looking forward to developing the business and possibly branching out to include other social inclusion projects in Leitrim or further afield.
Also on the show today we look at some local sports news, we check in with Ailbhe Clancy at the World University Games with the Women’s Football team having reached the Semi Finals of the competition where they face North Korea this evening in Napoli.
